Ingredients:
– 1 cup quinoa

– 1 yellow pepper, sliced
– 1 zucchini, sliced
– 1 red onion, sliced
– 1/4 cup olive oil
– 2 tbsp balsamic vinegar
– 1 garlic clove, minced
– Salt and pepper to taste
– Fresh parsley for garnish

Instructions:

1. Preheat the oven to 400°F.

2. Rinse the quinoa and add it to a pot with 2 cups of water. Bring to a boil, then reduce the heat to low and cover. Cook for 15-20 minutes, or until the water is absorbed and the quinoa is tender.

3. While the quinoa is cooking, arrange the sliced peppers, zucchini, and red onion on a baking sheet. Drizzle with olive oil and season with salt and pepper. Roast in the oven for 20-25 minutes, or until the vegetables are tender and slightly charred.

4. In a small bowl, whisk together the balsamic vinegar, minced garlic, and a pinch of salt and pepper.

5. Once the quinoa and vegetables are done, combine them in a large bowl. Drizzle the balsamic dressing over the top and toss to combine.

6. Serve warm or at room temperature, garnished with fresh parsley.
