Delicious and Healthy Quinoa and Black Bean Salad Recipe for Picky Eaters

As someone who struggled with their weight for years, I know firsthand how important it is to maintain a healthy diet. But eating healthy doesn’t have to be boring or tasteless. Quinoa and Black Bean Salad

Ingredients:
– 1 cup quinoa
– 1 can black beans, drained and rinsed
– 1 red bell pepper, diced
– 1/2 red onion, diced
– 1/2 cup fresh cilantro, chopped
– 1 avocado, diced
– Juice of 1 lime
– Salt and pepper to taste

Instructions:
1. Rinse the quinoa in a fine mesh strainer and add it to a pot with 2 cups of water. Bring to a boil, then reduce heat to low and simmer for 15-20 minutes, or until the water has been absorbed and the quinoa is tender.
2. In a large bowl, combine the cooked quinoa, black beans, red bell pepper, red onion, and cilantro.
3. In a separate bowl, mash the avocado with the lime juice and season with salt and pepper.
4. Add the avocado mixture to the quinoa salad and toss to combine.
5. Serve chilled or at room temperature.

This salad is packed with protein, fiber, and healthy fats, making it a nutritious and satisfying meal. Plus, it’s easy to customize with your favorite veggies or toppings. I often add some cherry tomatoes or diced cucumber to mine for extra crunch.
